Method

  1. Light the charcoal early and let it burn down to glowing embers with no flame left

  2. Sear the meat in the niter kibbeh in a hot pan for 5 minutes, until it is well browned

  3. Add the onion, garlic, ginger and berbere and cook 3 minutes

  4. Add the tomato, chillies, rosemary and salt and cook 3 minutes

  5. Put the embers in the base of the shekla and set the clay dish over them to heat through

From the kitchen

  • The clay dish is the dish. Shekla tibs that arrives silent has not worked

  • Embers, not flame. A flame scorches the underside before anyone has had a chance to eat

  • With no shekla, a small cast-iron pan heated empty in a very hot oven gets surprisingly close

  • Eat it fast and from the outside in, while the bottom layer is still crisping against the clay
