Ingredients

Make

4 servings

Method

  1. Soften the onions in the oil over medium heat for 8 to 10 minutes without colouring them

  2. Add the garlic, ginger and turmeric and cook 1 minute

  3. Add the lentils and the water

  4. Simmer uncovered 20 to 25 minutes, stirring now and then, until the lentils break down into a loose purée

  5. Drop in the slit chillies for the last 5 minutes

  6. Salt it, and loosen with a little water if it has gone thicker than you want

From the kitchen

  • Alicha means no berbere. Everything else is the same as misir wat, which makes this the easiest way to feed a mixed table

  • Stir the bottom of the pot. Lentils catch and a caught lentil stew tastes of nothing else

  • It thickens a lot as it cools, so take it off looser than you want to serve it

  • Yellow split lentils hold their shape a little better if you prefer some texture
