Ingredients

Make

4 servings

Method

  1. Soften the onions in the oil over medium heat for 8 minutes, without letting them take any colour

  2. Add the garlic, ginger and turmeric and cook 1 minute

  3. Add the potato, carrot, water, salt and the slit chillies

  4. Simmer covered 20 to 25 minutes until the potatoes are tender

  5. Leave the chillies whole throughout — they season the sauce without making it hot

  6. Rest it 10 minutes off the heat before serving; it thickens as it stands

From the kitchen

  • Alicha means no berbere. The turmeric does the colour and the ginger does the warmth

  • Slit chillies rather than chopped is the whole trick: you get the perfume and none of the fire

  • Keep the potato chunks big. Cut them small and they disintegrate into the sauce

  • This is the dish to put in front of a child, or anyone who cannot take berbere
