Method

  1. Simmer the lentils in the water until tender but still holding their shape, 20 to 25 minutes

  2. Drain them well and spread them out to cool completely — warm lentils turn the dressing cloudy

  3. Soak the chopped onion in cold water for 5 minutes and drain; this takes the raw bite out of it

  4. Whisk the mustard, oil, lemon juice and salt into a dressing

  5. Fold the lentils, onion and chilli through it

  6. Leave it 30 minutes, then taste again for salt and lemon before serving cold

From the kitchen

  • Green or brown lentils only. Red lentils collapse into purée and azifa needs whole grains

  • The mustard is the dish. Ethiopian senafich is sharper than Dijon, so use less if you are substituting

  • It is better on the second day, which makes it the easiest thing to prepare ahead for a beyaynetu

  • Serve it cold. Warm azifa tastes like undercooked lentils
