Method
Toast the barley flour in a dry pan over medium heat, stirring the whole time, for 10 to 12 minutes, until it darkens a shade and smells nutty
Let it cool for a few minutes — hot flour will split the butter
Work the niter kibbeh through it with your hands or the back of a spoon until the flour has taken all of it up
It is right when a handful squeezed in your fist holds its shape
Season with the salt
Mound it in a bowl, spoon the ergo over one side, and put the mitmita beside it

From the kitchen
Stir the whole time it toasts. Barley flour goes from nutty to burnt inside a minute and there is no coming back
The squeeze test is the only reliable one. Too little butter and it falls apart; too much and it is greasy
An Oromo dish, eaten at breakfast and packed as food for a journey because it keeps and needs no reheating
Cold sour ergo against the warm buttery flour is the traditional pairing and it is the better half of the dish
