Method
Whisk the bulla into 1 cup of the cold liquid until it is completely smooth
Bring the rest of the liquid to a boil with the salt
Pour the slurry in slowly, whisking without stopping
Cook 8 to 12 minutes, still whisking, until it thickens and turns glossy and slightly translucent
For the porridge: spoon it into a bowl, make a well in the middle and pour in the kibbeh melted with the berbere
For the drink: thin it with more liquid until it pours, sweeten with honey, and serve hot in a cup

From the kitchen
Bulla is the whitest and finest thing the enset plant gives, and it is what a household brings out for someone weak or recovering
It goes slightly translucent when it is properly cooked. Still opaque means it needs longer
Cold slurry first, the same as atmit and every other Ethiopian flour drink
A Gurage staple, and the usual partner to kitfo alongside kocho
