Method

  1. Put the beef in a pot with 2 cups of water and bring it to a simmer, skimming off the grey foam as it rises, until the broth runs clear

  2. Simmer it covered 30 minutes, until the meat is tender, then set it aside in its broth

  3. In a second pot cook the onions in the niter kibbeh for 10 minutes until soft and gold

  4. Add the garlic, ginger and berbere and cook 2 minutes

  5. Add the meat with all of its broth and the remaining water, and bring it to a boil

  6. Rain the shiro powder in through your fingers while whisking constantly

  7. Simmer 12 to 15 minutes, stirring, until it thickens and the raw flour smell has gone

  8. Add the chillies and salt for the last 3 minutes

From the kitchen

  • Skim the broth properly at the start. Every bit of grey foam you leave in ends up as a muddy taste in the finished shiro

  • Cook the meat first and separately. Raw beef dropped into thickening shiro will not cook through before the shiro catches

  • Whisk the powder in, the same as any shiro. There is no recovering a lumpy one

  • Bozena shiro is what a household makes when it has a little meat and not much of it — the shiro stretches it across five people
