Method
Buy the meat the morning you will eat it, from a butcher who knows you are eating it raw. This is the whole recipe and everything else is arrangement
Keep it refrigerated and covered until the moment it goes to the table
Trim off every trace of fat, sinew and silverskin
Cut it into a few large pieces rather than slices, so it stays cold and people cut their own at the table
Put the awaze and the mitmita into small dishes, and the melted niter kibbeh into a third
Lay the meat on an injera with the dishes around it, the gomen kitfo to one side and the chillies beside that
Each person cuts a piece, drags it through awaze or dips it in mitmita, and eats it with a fold of injera

Raw beef carries a real risk. Buy from a butcher who knows the meat is for tere siga, eat it the day it was slaughtered, and keep it cold the entire time in between
Do not serve it to anyone pregnant, elderly, very young, or with a weakened immune system. In Ethiopia this is common sense rather than a rule, but it is worth writing down
Fillet and top round are the cuts. Anything with sinew running through it is unpleasant to eat raw
Cold meat, room-temperature awaze. Serving the meat at room temperature is both less safe and less good
