Ingredients

Method

  1. Blend each fruit separately with a little water and sugar into a thick purée you could eat with a spoon

  2. The avocado should be the thickest of the three; thin purées will not hold their layers

  3. Pour the heaviest purée into a tall glass first, about a third of the way up

  4. Tilt the glass and pour the second slowly down the inside wall so it settles on top rather than mixing in

  5. Repeat with the third

  6. Squeeze lime over the top and serve at once, with a long spoon

From the kitchen

  • Thickness is the only thing keeping the layers apart. If they blur into each other, the purées were too loose

  • Pour slowly, down the side of a tilted glass. Poured straight in, the second layer punches through the first

  • The order varies from one juice house to the next, but avocado in the middle is the most common

  • A spoon, not a straw. Spris is eaten
