Method
Mix the melted kibbeh, berbere and salt into a loose paste
Lay an injera flat and spread the paste right to the edges, on the smooth underside
Toast it on a dry griddle or a wide pan over medium heat
Press it down and leave it alone for 3 to 4 minutes, until the base is crisp and the edges curl up
Fold or roll it and cut across into pieces
Eat it immediately, while it still snaps
Photographs
From the kitchen
The paste goes on the smooth underside. The eyed side faces up and stays soft, which is what makes the contrast
It has to be eaten straight off the griddle. Five minutes on a plate and it has gone soft
The classic use for injera that is a day past its best, which is most of why it exists
Usually eaten with tea rather than coffee
