Method

  1. Mix teff flour and water to form a batter; add salt

  2. Cover batter and let ferment at room temperature for 24-48 hours until bubbles form

  3. Once fermented, stir batter and pour onto a hot griddle or non-stick pan in a spiral

  4. Cook until holes form on surface and edges lift (about 1 minute)

  5. Remove and repeat until batter is used
