Method

  1. Make a soft dough from the flour, salt and water, knead it 8 minutes until it is smooth, and rest it 30 minutes under a film of oil

  2. Divide it into two balls. On an oiled surface, flatten each one and stretch it with your palms until it is almost transparent

  3. Pour a third of the beaten egg over the sheet and spread it to the edges

  4. Fold the sheet in from all four sides to make a square parcel

  5. Fry it in a little oil over medium heat, 3 to 4 minutes a side, until golden and puffed

  6. Cut into squares and serve hot, with honey

From the kitchen

  • Oil for stretching, never flour. Flour makes the sheet tear before it gets thin enough

  • The half-hour rest is what lets it stretch that far. Skip it and it springs back every time

  • Eat it hot. Cold fatira turns leathery and no amount of honey rescues it

  • A plain version with no egg is made on fasting days
