Ingredients

Make

3 servings

Method

  1. Mix the flour, salt and water into a soft dough, knead it 5 minutes and rest it 15

  2. Divide it in two and roll each piece thin enough to see the board through

  3. Cook them on a dry hot griddle, 2 minutes a side, until they blister and dry out. This is kita

  4. Tear the kita into bite-sized pieces with your hands while it is still hot — not with a knife

  5. Melt the niter kibbeh in a wide pan, stir in the berbere and cook it 1 minute

  6. Toss the torn kita through until every piece is coated and glossy

  7. Serve at once with honey and ayib on the side

From the kitchen

  • Tear it hot. Cold kita tears ragged and will not drink up the butter the way hot kita does

  • Honey against the berbere is the whole point of the dish. Serving it without honey is a different, lesser breakfast

  • An Oromo dish. You will also see it called kita firfir, which is the same thing

  • For a fasting morning use oil in place of the kibbeh and leave the ayib off
