Ingredients

Make

Method

  1. Warm 1 cup of the water just enough to loosen the honey. Do not let it boil

  2. Stir the honey in until it has dissolved completely

  3. Add the remaining water cold and stir

  4. If you want the bitter edge, steep the gesho leaves in it for an hour and then strain them out

  5. Chill it thoroughly

  6. Serve cold, with a squeeze of lemon if you like

From the kitchen

  • Berz is tej before the fermentation — the same honey and the same water, simply stopped early

  • Never boil the honey. It loses its scent and what you are left with is sugar water

  • With gesho it moves towards tej's bitterness; without it, it is a plain sweet drink for children and for fasting days

  • Made in quantity for Meskel and Timket, when there is a house full of people and not everyone is drinking tej
