Ingredients

Make

4 servings

Method

  1. Toss the strips with half the berbere, the garlic, the ginger and the salt, and leave them an hour

  2. Get a heavy pan very hot before anything goes in

  3. Sear the strips in the niter kibbeh in two or three batches, about 2 minutes each, so they colour instead of steaming

  4. Return all the meat to the pan and add the onion wedges; cook 3 minutes

  5. Add the rest of the berbere, the tomato and the chillies and cook 2 minutes

  6. Throw in the rosemary at the very end and serve straight from the pan, still spitting

From the kitchen

  • Zilzil means strips, and the cut is the whole distinction from ordinary tibs

  • Cut across the grain. Along the grain the strips will be chewy however briefly you cook them

  • Batches, always. A crowded pan drops in temperature and boils the meat in its own juice

  • The rosemary goes in at the end so it perfumes rather than cooks
