Method
Whisk the fava flour into 3 cups of cold water until completely smooth
Simmer it, stirring constantly, for 15 to 20 minutes until thick and the raw taste has gone
Cool it completely, then beat in the mustard powder
Cover it loosely and leave it at room temperature for 2 to 3 days. It will sour and sharpen, and that is the whole point of the dish
Cook the onion and garlic in the oil until soft, stir in the berbere and cook 2 minutes
Beat the seasoned oil, the lemon juice and the salt through the soured base
Rest it an hour before serving

From the kitchen
The mustard and the ferment together are what siljo is. It should sting the nose — if it does not, it has not worked
Taste it every day. Two days in a warm kitchen is usually enough; three if the house is cold
If it smells of anything other than sour mustard, throw it out and start again. This is the one recipe here where that matters
A Gondar and Gojjam dish, eaten mostly during Lent and usually made in a large batch
