Ingredients

Method

  1. Slit each chilli lengthways down one side only, leaving the stem on and both ends joined

  2. Scrape out the seeds and the white membrane with a small spoon. Most of the heat lives in the membrane, not the seeds

  3. Soak the chopped onion in cold water for 10 minutes, then drain and squeeze it dry

  4. Mix the onion, tomato, lemon juice, oil, salt and mitmita

  5. Pack the filling into each chilli through the slit, pressing it in with a small spoon

  6. Chill 30 minutes before serving

From the kitchen

  • Take the membrane out properly. A senig karya that takes the top of your head off has failed at its job, which is to be eaten whole in one or two bites

  • Squeeze the onion dry or the filling weeps and runs straight back out of the chilli

  • Large mild chillies only. The small hot ones are impossible to fill and unpleasant to eat whole

  • Served beside tibs, beside kitfo, and on a beyaynetu tray, where it does the job a pickle does elsewhere
