Ingredients

Make

20 servings

Method

  1. Toast everything except the nutmeg in a dry pan over low heat for 1 to 2 minutes, just until it is fragrant

  2. Take it off and let it cool completely

  3. Grind it to a fine powder

  4. Grate the nutmeg in last, off the heat — toasted nutmeg turns bitter

  5. Sieve the blend and regrind whatever is left behind

  6. Store it in a small sealed jar

From the kitchen

  • Mekelesha goes in at the very end of a wat, in the last two minutes, and is never cooked. Everything it contributes is aroma, and heat destroys it

  • Half a teaspoon is enough for a family pot. It is a perfume, not a seasoning

  • Timiz is the spice that makes it recognisable. Leave it out and you have a generic warm blend that could come from anywhere

  • It fades after a couple of months, so make it in small amounts and make it often
