Method

  1. Stir the yeast and the honey into the warm water and leave it 10 minutes until it foams

  2. Mix the flour, salt, korerima and nigella in a large bowl

  3. Pour in the yeast liquid and the melted kibbeh and work it into a firm dough

  4. Knead it 15 minutes. It should be stiffer than a sandwich loaf

  5. Cover it and leave it to rise 2 hours, until doubled

  6. Knock it back and shape it into one large round. Do not divide it

  7. Line a heavy lidded pot or a deep tin with the leaves, set the dough in, and fold more leaves over the top

  8. Bake covered at 170°C for 1 hour 15 minutes to 1 hour 30, until a skewer comes out clean

  9. Let it cool in the leaves before unwrapping

From the kitchen

  • One loaf, never rolls. Difo dabo is meant to arrive whole and be broken by hand at the table

  • The leaves are not decoration. They keep the crust soft and put their own scent into the crumb

  • A heavy lidded pot is the closest a modern kitchen gets to the ash oven this was baked in

  • It keeps the better part of a week and toasts well on the fourth day
