Method
Stir the yeast and a spoon of the sugar into the warm water and leave it 10 minutes until it foams
Mix the flour, the rest of the sugar, the salt and the korerima
Beat in the yeast water, the egg and the oil to make a soft, sticky batter-dough — too soft to roll out
Cover and rise 45 minutes
Heat the frying oil to 170°C. Any hotter and the outside colours before the middle cooks
Drop in heaped spoonfuls, a few at a time, and fry 3 to 4 minutes, turning them so they brown all over
Lift them out and drain them briefly
Roll them in sugar while they are still warm

From the kitchen
The dough should be too soft to roll. If you can roll it out, add a little more water
170°C and no hotter. This is the single thing that decides whether the middle cooks
Sugar while warm, so it sticks. Cold chornaki shrugs the sugar straight off
Bus stations and school gates. They are meant to be eaten standing up, out of a paper cone
