Method
Dry the chillies fully — in the sun for a day, or in an oven at its lowest setting until they snap rather than bend
Toast the whole spices one kind at a time over low heat, 30 to 60 seconds each, until you can smell them. They burn at different speeds, which is why they go in separately
Spread everything out and let it cool completely; grinding warm spices turns them to paste
Grind the chillies first, then the toasted spices, to a fine powder
Stir in the paprika, ginger, garlic, onion, turmeric, cinnamon and salt
Sieve the mix and regrind whatever stays behind
Store in a sealed jar away from light and heat

From the kitchen
The colour comes from the chilli and the paprika, not from cooking it harder. A scorched batch turns brown and bitter and cannot be rescued
Berbere is better after a week in the jar — the fenugreek and korerima need time to settle into the chilli
Grind it outdoors or wear a mask. Two cups of chilli dust in a closed kitchen is genuinely unpleasant
Every household's ratio is different. Treat this as a starting point and push the korerima or the fenugreek to taste
